限かぎる = 'to limit', so に限らず = 'without limiting to ~'. Usually followed by も marking the additional, broader case (週末しゅうまつに限らず平日へいじつも). Distinct from に限って ('of all ~, precisely when') and に限る ('nothing beats ~').
